Abbie Rybolt, R.D.

Abbie Rybolt, RD, is a Registered Dietitian with more than a decade of experience providing clinical outpatient nutrition counseling. She specializes in helping patients navigate complex medical conditions through personalized, evidence-based nutrition strategies that are both practical and sustainable in everyday life.

Her interest in nutrition was shaped by a deeply personal experience during her junior year of college. While exploring several science and healthcare majors, she was unsure which path felt right. That changed when her father was diagnosed with type 2 diabetes. After returning home from his appointment, he expressed uncertainty and fear about what he could eat moving forward. Hearing him say, “I don’t know what I can eat,” was a moment that left a lasting impact.

Food had always seemed intuitive, something people naturally know how to do. Seeing someone she loved feel overwhelmed by such a fundamental part of daily life sparked a desire to help others facing similar challenges. When her father later met with a registered dietitian, she witnessed firsthand how nutrition counseling transformed his health and confidence. His blood glucose improved, his energy returned, and many of his digestive and metabolic concerns began to resolve. That experience solidified her decision to pursue a career in dietetics.

Abbie earned her degree in nutrition from Northwest Missouri State University and completed her dietetic internship through the University of Delaware. Over the past ten years, she has developed extensive experience in outpatient clinical nutrition counseling, supporting patients managing a wide range of health conditions.

Her clinical experience includes diabetes management, heart-healthy nutrition, gastrointestinal disorders such as irritable bowel syndrome (IBS) and inflammatory bowel disease (IBD), ostomy nutrition (ileostomy and colostomy), oncology nutrition, and enteral nutrition support, among other areas of medical nutrition therapy. She is currently pursuing certification as a Certified Diabetes Care and Education Specialist (CDCES) to further expand her expertise in diabetes education and patient care.

As a military spouse, Abbie has lived in multiple regions and has had the opportunity to work with individuals from diverse backgrounds and cultures. These experiences have shaped her patient-centered counseling style, which emphasizes empathy, clear education, and practical strategies that empower patients to make meaningful, lasting changes.

She believes nutrition counseling is not only about providing information, but about helping patients feel supported and capable as they navigate new diagnoses, health challenges, and lifestyle changes. She is particularly passionate about helping patients move past confusion and fear surrounding food and instead develop confidence in their ability to nourish their bodies and improve their health.

Outside of her professional work, Abbie enjoys gardening, crafting, and spending time in the kitchen creating nourishing meals and baked goods for her family. She believes that food should be both nourishing and enjoyable, and she strives to help her patients build sustainable nutrition habits that support long-term health and quality of life.
